At Phoenix Sweets, we believe in the "Maker" connection. Every cake is handcrafted onsite in our Unley kitchen using authentic ingredients. We start with our substantial Victoria Sponge base, infused with premium Earl Grey tea leaves. We never use artificial tea flavourings—instead, we steep real tea to ensure a deep, authentic bergamot aroma in every bite.

The magic happens in the filling. We pair the earthy tea sponge with a silky Rose Swiss Meringue Butter Cream that offers a delicate floral sweetness. To perfectly balance the richness, we add a layer of our homemade Mixed Berries jam.

The Result: The tartness of the berries complements the floral rose and earthy tea notes, creating a refreshing, "less sweet" finish that is uniquely appetizing.

The Phoenix Standard Texture

Please note that this is not a dense mud cake and not a light, airy supermarket sponge. We specialise in an enhanced Victoria Sponge with Butter Cream, bringing a touch of our Hong Kong heritage to South Australia.

  • Lead Time: As each cake is an artisan creation, we require 1-2 weeks advance notice.

  • Pickup & Delivery: Pickup is available at our Unley studio (113 King William Road). We also offer Metro-wide delivery across Adelaide (pickup is recommended for the safest transport of your "Edible Art").

Storage & Serving Guide

To enjoy the intended silky texture of our Swiss Meringue Butter Cream, please follow these steps:

  1. The "Warm-Up" is Crucial: Our cakes are best enjoyed at Room Temperature (approx. 20°C).

  2. Refrigeration: If you are not serving the cake on the day of pickup, store it in the fridge.

  3. Serving Tip: Before your guests arrive, you must take the cake out of the fridge for at least 2 to 3 hours. We recommend keeping it inside its original box during this time to protect the delicate finish from condensation.

Note: Serving the cake below 15°C will result in a firm, less enjoyable butter cream texture. Patience is the secret ingredient for the perfect slice!
