The Phoenix Standard
Unlike the heavy mud cakes or airy supermarket sponges common in Australia, our Japanese Zen cake uses our signature Victoria Sponge base. Handcrafted onsite in our Unley kitchen, this base is infused with premium Japanese Hojicha. Roasted over charcoal, this tea imparts a warm, smoky, and earthy aroma that anchors the cake.
Signature Flavours
We layer this unique sponge with our silky Swiss Meringue Butter Cream, generously blended with legendary Japanese Kuki Black Sesame (九鬼黑芝麻). The natural oils from the sesame create a nutty, aromatic explosion that perfectly balances the roasted tea notes.

Storage & Serving Guide
To enjoy the intended silky texture of our Swiss Meringue Butter Cream, please follow these steps:

The "Warm-Up" is Crucial: Our cakes are best enjoyed at Room Temperature (approx. 20°C).

Refrigeration: If you are not serving the cake on the day of pickup, store it in the fridge.

Serving Tip: Before your guests arrive, you must take the cake out of the fridge for at least 2 to 3 hours. We recommend keeping it inside its original box during this time to protect the delicate finish from condensation.
Note: Serving the cake below 15°C will result in a firm, less enjoyable butter cream texture. Patience is the secret ingredient for the perfect slice!
